Lentils

  1. Put the lentils in a small pot with the water, bring to a boil, and cook until tender, adding a little more water, if necessary.
  2. That could take anywhere from 25 to 35 minutes.
  3. If all the water hasnt been absorbed by the time the lentils are cooked, drain it off.
  4. Season the lentils with salt to taste.
  5. For an Indian accent, add to a pot of 1/2 cup lentils and 1 cup water: 1/8 cinnamon stick, 1/4 bay leaf, 1 peeled garlic clove, 1 thin slice peeled ginger, a pinch of turmeric, and salt and pepper.
  6. Top with a small sprinkling of toasted cumin.
  7. This is good with rice.
