Penne Alla Vodka
- 1 box penne rigate (Ronzoni Smart Taste)
- 1/2 c. frozen peas
- 1 1/2 tsp. olive oil
- 13 c. chopped shallots
- 1/4 c. vodka
- 2 c. marinara sauce
- 4 oz. fat-free cream cheese
- Cook pasta in large pot of salted boiling water as box directs.
- Add peas just before draining pasta.
- Meanwhile, heat olive oil in a medium saucepan.
- Add shallots; cover and cook over medium heat 3 minutes.
- Add vodka; boil until evaporated, about 2 minutes.
- Stir in marinara sauce; simmer 2 minutes to blend flavors.
- Stir in cream cheese and cook, stirring until melted.
- Drain pasta and peas.
- Return to pot; add sauce and gently toss to combine.
