Acorn Squash And Apple Soup Recipe

  1. *NOTE: Original recipe used 4 Tablespoons butter...
  2. I used 1 1/2 Tablespoons
  3. This soup captures the taste of autumn with minimal fuss.
  4. It is especially delicious served cool with a dollop of lowfat sour cream.
  5. To make a lower calorie version, use half of the butter and garnish with yogurt.
  6. Saute/fry the onion and squash in the butter for 2 min.
  7. Add in the apple juice, chicken stock, apple and seasoning.
  8. Cook till vegetableare tender, then puree in blender.
  9. Serve hot with lowfat sour cream on side.
  10. Garnish with parsley.
  11. Can be served warm or possibly cool.
  12. Makes 6 servings.
