Chicken and Vegetable Shish Kabobs
- 8 ounces, weight Chicken Breast, Skinless, Boneless, Cut Into 1/2" Pieces
- 1/4 whole Onion, Cut Into Quarters
- 1/4 whole Large Sweet Bell Pepper, Cut Into Chunks
- 1 whole Small Zucchini, Cut Into 1/2" Slices
- 2 whole Plum Tomatoes Or Cherry Tomatoes
- 2 Tablespoons Balsamic Dressing
- 1 dash Salt
- 1 dash Ground Pepper
- Soak 2 or 4 wooden skewers for 30 minutes in water or use metal skewers.
- Start skewing your chicken, then vegetables, then chicken, then vegetables.
- Keep alternating between the chicken and veggies until there are no longer any left.
- In a small bowl, add balsamic dressing and brush onto chicken and vegetables.
- Sprinkle with salt and pepper.
- Place in refrigerator and let it marinate for 30 minutes.
- Preheat grill to medium heat.
- Place skewers onto grill and rotate about every 2 minutes.
- Cook until chicken is no longer pink, about 7 minutes.
