Tortellini Casserole
- 8 ounces, weight Tortellini (frozen Or Boxed)
- 1 Tablespoon Olive Oil
- 1 cup Chopped Onion
- 2 whole Garlic Cloves, Minced
- 1 whole Red Bell Pepper, chopped
- 1 whole Green Bell Pepper, Chopped
- 1 teaspoon Italian Seasoning
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 1 pound Lean Ground Beef
- 3 cups Pasta Sauce - Fresh Or Jarred
- 2 cups Grated Parmesan Cheese
- Cook tortellini according to package directions.
- Then drain and set aside.
- In a large skillet, saute onion and garlic in some olive oil over medium heat for a few minutes until softened.
- Add chopped peppers and cook until they are slightly soft.
- Add Italian seasoning and salt and pepper.
- Remove to a plate and set aside.
- Cook ground beef over medium heat until browned.
- Drain grease, if necessary.
- Add onion/pepper mixture to ground beef then stir in the pasta sauce and 1 cup Parmesan cheese.
- Stir in cooked tortellini.
- Pour into greased 9x13 casserole dish and top with remaining Parmesan cheese.
- Bake at 350F for 20 25 minutes or until bubbly.
