Pasta Paddy O (Oh Baby!)
- 13 cup olive oil
- 3 garlic cloves, chopped
- 12 small yellow onion, chopped
- 1 (14 ounce) can artichoke hearts
- 2 -3 cups frozen peas
- oregano, as desired
- parsley, as desired
- 1 lb rigatoni pasta or 1 lb penne
- salt
- grated parmigiano
- Throw Olive Oil in a large skillet, heat on medium heat until fragrant.
- Add chopped garlic to oil and once it starts to turn slightly golden throw in the onion and turn down the heat to medium low.
- Meanwhile start to boil the pasta.
- Once boiled drop pasta and some salt in and cook until al dente.
- Check on the onions they should be somewhat soft, when they are add the artichokes and peas.
- Eyeball the amount of oregano and parsley you want to add to the dish (you can really add any spice which you desire at this point but these are my go-to's!).
- Then stir it up baby!
- Drain the pasta and mix it up with the artichoke concoction.
- Sprinkle on a GENEROUS amount of cheese and enjoy.
