Blueberry Cheesecake in a Mug
- 2 graham crackers, finely crushed (about 1/3 cup)
- 1 Tbsp. butter, melted
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 1/4 cup sugar
- 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 tsp. vanilla
- 1 egg, beaten
- 1/2 cup fresh blueberries Whole Foods 3 For $10.00 thru 02/09
- Combine graham crumbs and butter; press onto bottoms of 4 microwaveable 8-oz.
- mugs sprayed with cooking spray.
- Mix cream cheese, sugar, sour cream and vanilla in medium bowl until blended.
- Add egg; mix well.
- Gently stir in blueberries; pour over crusts.
- Cover each with small square of waxed paper sprayed with cooking spray, sprayed side down.
- Microwave on HIGH 1 min.
- Cool slightly.
