Pork chops with caramelized apple and onion
- 4 boneless pork chops, 3/4" thick
- 2 tbsp vegetable oil
- 1 tbsp ground black pepper
- 3 large apples, peeled, cored and sliced
- 1 large white onion, chopped
- 1 cup Sweet white wine
- 6 large russet potatoes, peeled and diced
- In a large skillet, heat half of the oil over medium heat.
- Using half the ground pepper, season chops and put into hot oil.
- Sear for 3 minutes on each side.
- Meanwhile, Boil potatoes in water until soft.
- Remove chops and put apples and onions in skillet.
- Sautee for 15 minutes, stirring occasionally.
- When onions are translucent, add white and deglaze pan.
- Add chops, making sure they are covered with apple mixture.
- Keep on medium heat for 15 minutes, turning chops after 8 minutes.
- When potatoes are soft, remove from heat and drain.
- Add remaining oil and ground pepper and mash till you get the texture you desire.
- On a plate, put a helping of potatoes.
- Cover with a spoonful of mixture.
- Then then chop and cover with more mixture and enjoy.
