Smoked Meatloaf wrapped in Bacon

  1. Mix the eggs, bread crumbs and seasonings well then mix it with the hamburger.
  2. Shape meatloaf into a log and refrigerate overnight.
  3. (the meatloaf is very loose and it needs to be refrigerated overnight to help set and firm up properly).
  4. Just before ready to cook wrap with bacon.
  5. Set up your grill for Indirect Heat.
  6. Placed meatloaf on the grill over the drip pan and add a handful or two of wet hickory wood chips.
  7. Cook at about 350F until you have an internal temperature of 170F.
  8. This should take about an hour and a half.
  9. Let rest 20 minutes before carving.
