White Wine and Cilantro Braised Fish

  1. Preheat oven to 375F (190C).
  2. Set fillets in a large baking pan.
  3. Ground garlic, salt and pepper with a spice or coffee grinder and spread evenly on fish.
  4. Arrange bay leaves on fish.
  5. Pour enough wine and olive oil on fish to almost cover it.
  6. Sprinkle 1/2 cup cilantro and the oregano over fish, cover with foil and bake for 28 to 32 minutes, spooning pan juices over fish 3 to 4 times.
  7. Cool to lukewarm.
  8. Combine remaining cilantro, pepper, tomato and chives together.
  9. Sprinkle on top of fish and serve warm.
