White Wine and Cilantro Braised Fish
- 3 pounds fish grouper, striped bass, red snapper, pollock, whiting or sea bream fillets
- 8 cloves garlic peeled, or more or less as needed
- 1 x salt to taste
- 1 x black pepper to taste
- 2 each bay leaves
- 2 cups white wine
- 4 tablespoons olive oil
- 1 cup cilantro freshly chopped
- 4 tablespoons oregano freshly chopped
- 1/2 each green bell peppers diced
- 1 each tomatoes diced
- 1/2 cup chives chopped or green parts of scallions
- Preheat oven to 375F (190C).
- Set fillets in a large baking pan.
- Ground garlic, salt and pepper with a spice or coffee grinder and spread evenly on fish.
- Arrange bay leaves on fish.
- Pour enough wine and olive oil on fish to almost cover it.
- Sprinkle 1/2 cup cilantro and the oregano over fish, cover with foil and bake for 28 to 32 minutes, spooning pan juices over fish 3 to 4 times.
- Cool to lukewarm.
- Combine remaining cilantro, pepper, tomato and chives together.
- Sprinkle on top of fish and serve warm.
