Mac and Cheese Style Cauliflower
- 1 large head cauliflower, cut into florets
- 2 tablespoons butter
- 3 tablespoons flour
- 2 cups milk
- 1 garlic clove, minced (about 1 tsp)
- 2 cups extra-sharp cheddar cheese, grated
- 1 pinch cayenne pepper
- 2 egg yolks
- 1 12 cups breadcrumbs
- Preheat oven to 350 degrees Fahrenheit.
- Boil cauliflower until tender, 5 to 7 minutes.
- Drain cauliflower, reserving 1 cup of the cooking liquid.
- Set aside.
- Over medium heat, in the same pot you cooked the cauliflower in, melt the butter.
- Whisk in flour.
- Cook 1 minute, stirring constantly.
- Whisk is milk, minced garlic and reserved cooking liquid.
- Cook 7 to 10 minutes or until sauce is thickened, whisking constantly.
- Remove from heat and stir in cheddar cheese, cayenne pepper, and egg yolks until cheese is melted.
- Combine cauliflower and cheese sauce.
- Spray a 13x9 cooking dish with non stick spray.
- Pour cauliflower mixture into dish.
- Sprinkle with breadcrumbs.
- Spray breadcrumbs with cooking spray.
- Bake for 30 minutes.
