rajas con huevo

  1. cut stems off all peppers, place all peppers and chiles on cookie sheet and put in oven at 350'
  2. after about five minutes or so check the peppers, flip them over.
  3. When the skins start to bubble up and char they are done.
  4. allow to cool down for handling.
  5. take each pepper and chile and slice them length wise in half, then in half again.
  6. you should get 4 slices out of each pepper and chile.
  7. slice the onion in half and peel it.
  8. slice it up thinly.
  9. beat the eggs in a bowl and set aside
  10. heat oil in fry pan then add onion, cook until almost transparent then add the chiles and peppers.
  11. Cook together about 4 minutes then add eggs.
  12. add salt to taste and continue cooking mixing the ingredients together .
  13. dish is done when all egg is cooked.
  14. I tend to over cook mine to give more of a grilled flavor, and to where some of the eggs start browning to a crust....
