rajas con huevo
- 2 lb mini sweet peppers
- 6 serano chiles
- 1 onion
- 12 eggs
- 1 salt to taste
- 2 tbsp oil
- cut stems off all peppers, place all peppers and chiles on cookie sheet and put in oven at 350'
- after about five minutes or so check the peppers, flip them over.
- When the skins start to bubble up and char they are done.
- allow to cool down for handling.
- take each pepper and chile and slice them length wise in half, then in half again.
- you should get 4 slices out of each pepper and chile.
- slice the onion in half and peel it.
- slice it up thinly.
- beat the eggs in a bowl and set aside
- heat oil in fry pan then add onion, cook until almost transparent then add the chiles and peppers.
- Cook together about 4 minutes then add eggs.
- add salt to taste and continue cooking mixing the ingredients together .
- dish is done when all egg is cooked.
- I tend to over cook mine to give more of a grilled flavor, and to where some of the eggs start browning to a crust....
