Simple Summer Rolls with Peanut Dipping Sauce

  1. Start by combining rice vinegar and sugar.
  2. Divide among 2 bowls.
  3. In one bowl, toss julienned carrots; in the other bowl, toss shredded cabbage.
  4. Marinate both for 1015 minutes.
  5. Prepare a large shallow bowl with lukewarm water.
  6. Choose a bowl large enough to dip rice papers in.
  7. Lightly wet rice paper one at a time until slightly pliable and place on a clean surface.
  8. Add some cabbage, carrots, cucumbers and a little mint and cilantro.
  9. Roll rice paper up.
  10. Now wet a second rice paper and re-roll the same wrap; set aside.
  11. Repeat until you have 4 spring rolls.
  12. To make the sauce, simply mix together soy sauce, rice vinegar, sugar, sesame oil and peanut butter until smooth.
  13. These spring rolls can be cut using a serrated knife and laid open side down.
  14. Sprinkle with sesame seeds.
  15. Serve with sauce on the side for dipping.
  16. Enjoy.
