Turkey Taquitos

  2. Shred or slice leftover cooked turkey into small pieces.

  4. Heat corn tortillas in the microwave in a plastic bag for approximately one minute.
  5. (I like to sprinkle a bit of water in so they are nice and moist and dont fall apart.)
  6. As microwave heating varies, you will know they are ready when you can roll them and they dont break.

  8. Place turkey on one side of a tortilla on a plate.
  9. Roll it up and place a toothpick in the middle to keep it rolled together.
  10. 4.
  11. Heat a pan of oil to medium heat.
  12. 5.
  13. Place taquitos in oil and fry until golden brown and crisp on both sides.
  14. 6.
  15. Finely shred green-leaf lettuce.
  16. 7.
  17. Top taquitos with shredded lettuce and salsa (my favorite is spicy tomato-avocado salsa) and a generous sprinkling of queso seco (basically a Mexican dry cheese).
  18. I use queso cotijo from my local grocer.
  19. Any Parmesan-type cheese will work.

  21. Now, try not to eat the whole plate.
  22. And refrain from cooking an entire other turkey just to make taquitos.
  23. These things arent light on the calories.
