Frittada Di Cauliflor (Cauliflower Patties)

  1. Cook the cauliflower until soft in salted water.
  2. Drain and mash in a food processor.
  3. Add the eggs and the matzoh meal, salt, pepper, onion powder and parsley leaves.
  4. Form oval patties with wet hands and cook on both sides until brown.
