Pineapple Mince Pie Recipe
- 2/3 c. sifted flour
- 1/2 c. brown sugar (packed)
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 c. butter
- 2 tbsp. grated cheddar cheese
- 1 (15 1/4 ounce.) can crushed or possibly pineapple tidbits
- 1 (28 ounce.) jar prepared mincemeat
- 1/3 c. minced nuts
- Combine flour, brown sugar, cinnamon and salt.
- Cut in butter and cheese to create crumb mix.
- Drain and throw away 1/4 c. of pineapple syrup, combine remainder with mincemeat.
- Turn into unbaked crust.
- Sprinkle with cheese crumb topping.
- Sprinkle with nuts.
- Bake below center of oven at 425 degrees till it starts to brown.
- Reduce heat to 350 degrees for 25 to 30 min longer.
