Bubble Room Cake Recipe

  1. To Make Cake: Heat oven to 350 degrees.
  2. Mix together all ingredients with an electric mixer.
  3. Spray three 9-inch round cake pans with non stick coating.
  4. Pour batter equally into three pans and bake for 20 min.
  5. Test for doneness with a tooth pick.
  6. Cold layers in pans on wire racks for 10 min.
  7. Carefully remove layers from pans to racks to cold completely.
  8. To Make Frosting: Combine butter, cream cheese and confectioners' sugar in a bowl.
  9. Beat till fluffy, then mix in 1-1/2 c. pecans.
  10. Use to fill and frost cake when it is cold.
  11. Decorate top of cake with remaininig 1/2 c. pecans, chill at least 1 hour before serving.
  12. Yield: 10-15 servings.
