Grilled Lime Chicken With Pineapple Salsa
- 5 tablespoons honey mustard or 5 tablespoons yellow mustard or 5 tablespoons honey dijon mustard
- 4 tablespoons thawed frozen limeade concentrate or 4 tablespoons lemonade concentrate
- 1 teaspoon ground cumin
- 4 boneless skinless chicken breasts
- 1 12 cups chopped fresh pineapple
- 12 large red bell pepper, chopped
- 3 tablespoons cilantro, chopped
- Mix 3 tablespoons mustard, 3 tablespoons limeade concentrate and cumin in plastic food storage bag.
- Add chicken, seal bag.
- Marinate in refrigerator 1-2 hours.
- Stir together pineapple, bell pepper, cilantro and remaining mustard and limeade concentreate in medium bowl.
- Grill chicken over medium heat until no longer pink in center.
- Serve with salsa.
