Veggie Blend Stuffed Breasts

  1. Using a hand held food chopper (or food processor), chop all ingredients until pieces are very small.
  2. In a medium pan, add olive oil.
  3. When warm, add all chopped ingredients.
  4. Sprinkle with some salt and pepper.
  5. With knife, cut a pocket in the breasts.
  6. Do not cut breasts in half.
  7. Using a small spoon, stuff breasts with veggies.
  8. Close pocket using tooth picks.
  9. Sprinkle chicken with salt, pepper and garlic powder.
  10. In a large pan, cook chicken in medium heat until ready.
  11. Add cheese slices and wait until melted.
  12. Sprinkle with parsley or basil (if desired)and serve.
