Garlic Mashed Shiitakes and Potatoes - Duke Diet Fitness Center

  1. Combine the first 4 ingredients in a Dutch oven.
  2. Cover with water, and bring to a boil.
  3. Cover, reduce heat, and simmer for 20 mins., or until tender.
  4. Drain, reserving 1 cup cooking liquid.
  5. Discard bay leaf.
  6. Combine potato mixture, reserved cooking liquid, salt and pepper in a bowl.
  7. Using a mixer beat at med.
  8. speed, until smooth.
  9. Drizzle oil over potatoes.
