Bunya Nut Casserole Recipe

  1. Grease a 2 litre deep casserole dish.
  2. Cover bottom with a layer of Bunya Nuts, then add in a layer of sliced onions, that have been fried in a small quantity of oil till soft and clear.
  3. Next add in a layer of lightly fried minced bacon, then a layer of tomatoes.
  4. Sprinkle with some of the grated cheese.
  5. Repeat layers, finishing off with Bunya Nuts sprinkled with grated cheese.
  6. Cover, place in moderate oven for 1 to 1 1/4 hrs, removing lid for last 15 min.
  7. Serves 4 to 6.
