Raspberry Ginger Shandy
- 4 ounces Mike's hard lemonade
- 1 12 cups fresh raspberries
- 2 inches slice fresh ginger, peeled and sliced
- 12 cup water
- 2 tablespoons unbleached cane sugar
- 1 glass ice
- raspberries and lemon wedge (to garnish)
- Place the raspberries in a blender and puree until smooth.
- Transfer to a small saucepan and combine with the ginger slices, water and sugar.
- Bring to a boil and simmer until the sugar has completely dissolved, about 1 minute.
- Remove from heat, cover and let steep for 30 minutes to 1 hour.
- Strain the raspberry ginger juice through a fine mesh sieve into a small bowl and discard the solids.
- Let cool completely.
- Fill a mason jar with ice and pour 4 ounces of mikes hard lemonade with the previously made ingredients.
- Stir to combine, garnish with raspberries on top and a wedge of fresh lemon.
