Chunky Meatless Chili

  1. Heat big pot over medium-high heat.
  2. Saute green pepper, onion and garlic until onion is tender.
  3. Drain and rinse beans; drain corn.
  4. Stir in beans, corn, tomatoes, rice and water into onion mixture; season with chili powder and cumin.
  5. Bring to a boil.
  6. Reduce heat, cover and simmer 30 minutes, stirring occasionally.
