Blackened Chicken Fajitas
- 1 pound Thin Sliced Chicken Breasts
- Olive Oil
- Blackening Seasoning (like Zatarain's)
- 1 Green Bell Pepper, Sliced
- 1 Red Bell Pepper, Sliced
- 1 Medium Onion, Sliced In Half Rings
- 8 Flour Tortillas, Warmed
- Toppings Of Your Choice, Such As Shredded Cheese, Sour Cream, And Guacamole
- Brush each chicken breast with olive oil.
- Sprinkle with blackened seasoning.
- Heat a cast iron skillet over high heat.
- Cook each chicken breast 1 1/2 to 2 minutes, until charred and cooked through.
- Remove chicken and keep warm.
- Reduce heat to medium high.
- Add about 1 tablespoon of olive oil to the pan.
- Add sliced peppers and onions and cook, stirring occasionally, until crisp tender, about 45 minutes.
- Slice the chicken and serve with peppers and onions in tortillas with toppings of your choice.
