Harvest Stew
- 2 lbs beef stew meat, cubed
- 1 cup beef broth
- 3 cups butternut squash, cubed
- 4 medium tomatoes, chopped
- 12 cup chopped onion
- 34 teaspoon dried marjoram
- 34 teaspoon dried savory
- 3 medium zucchini, cubed
- salt and pepper
- 6 cups cooked polenta
- Combine all ingredients except zucchini, salt, pepper and polenta in a slow cooker.
- Cover and cook on low 6-8 hours, adding zucchini during the last 45 minutes.
- Season to taste with salt and pepper.
- Serve over polenta.
