Tuna Tom
- 3/4 lb. rotelle pasta
- 2 cans albacore tuna, solid white, packed in water, and drained
- 1/2 cup sun-dried tomatoes packed in olive oil, chopped
- 2 to 3 cups frozen cauliflower, broccoli and carrots
- 1 cup non-fat plain yogurt
- 1/2 cup grated Parmesan cheese
- 2 tsp. garlic powder
- 1 tsp. pepper, freshly ground
- Boil noodles in large pot.
- While noodles are boiling, prepare sun dried tomatoes and parmesian cheeese.
- Add vegtables in with boiling pasta, when only 2 minutes until pasta is done.
- Drain pasta and vegtable mix; return to pot.
- Add sun-dried tomatoes, garlic powder, pepper, and tuna.
- Flake tuna into mixture with a fork.
- Mix thoroughly.
- Add parmesian and yogurt.
- Serve immeadiately.
- You may warm the mix on low heat for 1-2 minutes if desired.
