Lime Pickles
- 10 limes
- 1 kg coarse salt
- 500 ml olive oil (not virgin)
- 1 tablespoon turmeric
- 1 tablespoon cumin seed
- 3 dried red chili peppers (crumbled)
- 3 (350 ml) jars
- Cut limes into 8ths length-wise and cover bottom of a large dish with them.
- I use a big casserole dish.
- Cover with salt.
- Put into freezer overnight.
- Thaw completely.
- Put into colander and rinse under cold water.
- Shake dry.
- Put 1/3 into @ clean jar.
- Meanwhile, pour oil into measuring jug, stir in turmaric, cumin seeds and crumbled peppers.
- Pour oil to the very top of jars, limes MUST be covered.
- Leave in dark place for 3 wks.
- Enjoy!
