Lime Pickles

  1. Cut limes into 8ths length-wise and cover bottom of a large dish with them.
  2. I use a big casserole dish.
  3. Cover with salt.
  4. Put into freezer overnight.
  5. Thaw completely.
  6. Put into colander and rinse under cold water.
  7. Shake dry.
  8. Put 1/3 into @ clean jar.
  9. Meanwhile, pour oil into measuring jug, stir in turmaric, cumin seeds and crumbled peppers.
  10. Pour oil to the very top of jars, limes MUST be covered.
  11. Leave in dark place for 3 wks.
  12. Enjoy!
