Cinnamonspiced French Toast With Maple Apples

  1. Core and cut apples into wedges.
  2. Place in medium saucepan with lemon juice and 1/2 cup (125 mL) water.
  3. Cover and gently simmer to soften (23 minutes).
  4. Drain.
  5. Toss with maple syrup and cinnamon.
  6. Set aside.
  7. Whisk eggs, Almond Fresh, sugar, salt and spices in a bowl.
  8. Soak each slice of bread, turning to soak both sides.
  9. Melt butter in nonstick fry pan.
  10. When bubbling, add soaked bread in batches.
  11. Turn part way through until golden brown on both sides.
  12. Keep warm.
  13. Divide among 4 plates, drizzle with applesyrup mixture, sprinkle with icing sugar and serve.
