Greek Orzo Salad
- 1 cup orzo pasta
- 1 cup crumbled feta cheese
- 12 european seedless cucumber, thinly sliced
- 12 yellow bell pepper, chopped
- 10 cherry tomatoes, halved
- 34 cup kalamata olive, halved and pitted
- 12 cup olive oil vinaigrette dressing
- 12 cup chopped scallion
- In a large saucepan of boiling salted water, cook orzo until tender but still firm, about 8 minutes.
- Drain well and rinse with cold water.
- Drain.
- In a medium bowl, combine orzo with the remaining ingredients.
- Toss gently to combine.
