Greek Style Lamb
- 2 lamb shoulders
- 2 garlic cloves
- 1 salt, pepper, ground coriander seed, dried parsley flakes, greek seasoning
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Preheat oven to 400.
- Lightly tenderize lamb on one side.
- Heat a cast iron grilling pan with the olive oil on medium high.
- On that side of the lamb, press in half the minced garlic into the meat.
- season with salt, and pepper.
- Flip lamb over, press in remaining garlic and season with salt, pepper, coriander, Greek seasoning, and parsley flakes.
- Once the pan is hot, place the lamp (parsley side up) in and sear for 10 minutes on medium high.
- Pour lemon juice on top of lamp and cover with tin foil.
- Place pan in oven and cook to desired doneness.
- (Optional) The topping is a simple saute of kalamata olives, feta cheese, pine nuts, and a little balsamic vinegar in olive oil.
- Sprinkle with a little parsley flakes and enjoy with other great Greek dishes.
