Sausage Stuffed Steak Recipe
- 2 pound steak, cut to 1/2" thick (divide to 4 pcs)
- 1 pound sausage (bulk)
- 1 1/2 c. minced onions (divide to 1/2 & 1 c.)
- 1 c. bread crumbs
- 1/2 c. Parmesan cheese, optional
- 4 c. minced tomatoes
- 1 green pepper, diced
- 1/2 teaspoon black pepper
- Lb.
- steak with a meat mallet to 1/4 inch thick.
- Fry sausage and saute/fry 1/2 c. of onions, pour off grease.
- Add in bread crumbs and cheese, if used.
- Fill center of steak with sausage mix.
- Tie or possibly skewer meat together on top and ends.
- Brown steak in oil, turning carefully.
- Add in tomatoes, green pepper, onions and black pepper in pan, around steak.
- Cover and simmer gently for 1 hour.
- Remove meat from pan and keep hot, puree tomato and onion fold in blender, if puree is too thin return to pan and cook down till thickened.
- Serve on a platter, slice steak into 1 inch thick slices, spooning sauce over meat.
