Chicken & Rice Salad
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 12 tablespoon lemon juice
- 12 teaspoon ground ginger
- 14 teaspoon turmeric
- 14 teaspoon cumin
- 14 teaspoon salt
- 14-12 onion, finely chopped
- 1 roma tomato, diced
- 1 cup cooked skinless chicken breast, diced
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1 -1 12 cup cooked rice, cooled
- Mix the ingredients for the dressing together in a small bowl, set aside.
- Place the salad ingredients in a medium glass bowl.
- Pour the dressing over top then stir until well blended.
- Serve cooled or at room temperature.
