Pear Coronation Salad from the Plaza Hotel

  1. Halve and core the pear peeling, if desired.
  2. Sprinkle pear halves with lemon juice.
  3. Combine crumbled cheese and 2 TBS of whipped cream to make a mixture of molding consistency.
  4. Fill the pear cavity with mixture and press the halves together to restore a whole pear shape.
  5. Place pear on a salad plate lined with leaf or Boston lettuce leaves.
  6. Fold Bar-le-duc into remaining whipped cream and spoon over salad.
  7. Can substitute heavy cream for whipped cream.
