Pear Coronation Salad from the Plaza Hotel
- 1 large ripe pear, bosc or bartlett
- 2 tablespoons fresh lemon juice
- 14 cup crumbled Roquefort cheese
- 13 cup whipped cream
- 4 lettuce leaves
- 2 tablespoons dry white wine
- Halve and core the pear peeling, if desired.
- Sprinkle pear halves with lemon juice.
- Combine crumbled cheese and 2 TBS of whipped cream to make a mixture of molding consistency.
- Fill the pear cavity with mixture and press the halves together to restore a whole pear shape.
- Place pear on a salad plate lined with leaf or Boston lettuce leaves.
- Fold Bar-le-duc into remaining whipped cream and spoon over salad.
- Can substitute heavy cream for whipped cream.
