Swiss Cheese and Mustard Crackers

  1. Process butter, cheese and eggs in food processor until well blended, using pulsing action.
  2. Add remaining ingredients; pulse until mixture forms dough and pulls away from side of work bowl.
  3. Transfer dough to floured surface; knead until smooth, adding additional flour as necessary.
  4. Wrap in plastic wrap.
  5. Refrigerate 1 hour.
  6. Roll out dough on lightly floured surface to 1/8-inch thickness; cut into 48 (7x1/2-inch) strips (or into 8 strips for trial recipe).
  7. Place in single layer in parchment paper-lined sheet pans.
  8. Bake in 350 degrees F-convection oven 12 to 15 min.
  9. or until lightly browned.
  10. Remove to wire racks; cool completely.
