Potato Fake Out!!

  1. OK - Refrigerate any leftover mashed potatoes, next day, nuke them til warm.
  2. Meanwhile, bring large pot of water to boil.
  3. Place potatoes in large bowl and add enough flour to form soft dough (it may take more than what I've written) Turn out on board and knead - adding enough flour to form non sticky but still soft dough.
  4. Divide dough if two large sections (depends on how much leftovers you had) Roll into long rope and cut into 1 inch pieces.
  5. Roll these pieces between palms of hand to form little sausages (size of your pinky) Continue till all of dough is used.
  6. Drop 2 handfuls into water and stir so as not to stick to bottom.
  7. When they float to top boil for about 1 minutes and remove to large bowl.
  8. Continue until all dough is boiled.
  9. In frying pan add oil and breadcrumbs and brown slightly.
  10. Toss over dough and serve as a side.
  11. You can adjust seasoning to taste.
  12. DESSERT!
  13. Same process to make dough and boiling process doesn't change.
  14. If using fresh poppy seeds or walnuts brown slightly (or both go nuts!)
  15. this gives good nutty flavor.
  16. Toss onto warm boiled dough and add sugar to taste.
  17. You can use canned and pre-sweetened - just leave out sugar and DO NOT brown in oil just toss into your boiled dough.
  18. Serve as desert!
  19. DESSERT 2 !
  20. Same process, make the dough (you may need to add more flour, it shouldn't be stick) but -- Flour the board well, roll out your dough to about 1/4 inch thick.
  21. Cut out 3 inch circles (coffee cup is good), or 2 x 4 inch strips, make a 1 inch slit in center (circle or strip).
  22. Bring oil to heat and fry (I know unhealthy, but once in awhile it's ok) Fry until light golden on both sides.
  23. (it's fast so be careful).
  24. Drain on paper plate, sprinkle with powdered sugar or Dip in applesauce (I love them dipped in applesauce).
  25. YUM.
