Salami and Gorgonzola Biscuits

  1. Preheat the oven to 425 degrees F.
  2. In a food processor combine the flour, baking powder, baking soda, and salt.
  3. Pulse 2 to 3 times until mixed.
  4. Add the butter and pulse until the mixture resembles coarse meal.
  5. Transfer the biscuit mixture to a medium bowl.
  6. Add the buttermilk, salami, and Gorgonzola.
  7. Stir until the mixture forms a ball.
  8. Turn the mixture out on a floured surface.
  9. Roll to 1/2-inch thick.
  10. Using a 1-inch diameter cookie cutter, cut out the biscuits and place them 2 baking sheets.
  11. Bake until golden, about 8 to 10 minutes.
