Vegetable & Peanut Pita

  1. Line small strainer with damp paper towel or cheesecloth.
  2. Place yogurt in strainer.
  3. Place over a bowl; refrigerate 10 min.
  4. Discard drained liquid.
  5. Set yogurt aside.
  6. Mix all vegetables in separate medium bowl.
  7. Add drained yogurt, lemon juice and garlic.
  8. Season as desired with favorite salt-free seasoning; mix well.
  9. Stir in peanuts.
  10. Spoon evenly into pita halves just before serving.
  11. Enjoy a cookie with the pita.
  12. Serve sandwich with a glass of milk.
