Be Bop Beans Recipe
- 1 med onion, peeled and sliced into half rings
- 1 med green pepper, minced into bite size pcs
- 1 x 415 gram tin kidney beans, liquid removed
- 1 x 415 gram tin butter beans, liquid removed
- 175 gm small button mushrooms.
- 3 med tomatoes, cut into quarters
- 2 Tbsp. vegetarian Worcestershire sauce
- 100 gm strong vegetanan cheddar cheese, cut into chunks
- 1 Tbsp. tomato puree little water
- 1.
- Heat the oil in a frying pan.
- Gently fry onions and pepper in oil till soft.
- 2.
- Add in kidney and butter beans, whole button mushrooms, tomato puree and Worcestershire sauce.
- Cook for 5-8 min on a low heat, stirring occasionally.
- 3.
- Add in tomatoes and cheese.
- Cook till the cheese has melted a little, but still has form.
- 4.
- Season and serve with crusty wholemeal bread.
