Roasted Apple, Onion and Potato Salad with Mint Dressing

  1. Place the potatoes and onions on one baking tray and the apples on another tray.
  2. Spray with canola oil and bake at 200C for 30-40 minutes or until golden brown and vegetables are tender.
  3. Combine dressing ingredients until mixed.
  4. Arrange roasted vegetables on a platter and drizzle with dressing.
