Hot and Sour Vinaigrette

  1. In a small, non-reactive saucepan, mix two quarts lime juice with sugar.
  2. Cook to a light caramel color stage.
  3. Add honey, scallion, garlic, shallot, ginger and vinegar.
  4. Reduce by half.
  5. Add lemon, orange and pineapple juices, and pepper.
  6. Bring to a boil then lower to a simmer.
  7. Reduce by 1/4.
  8. Strain vinaigrette and chill overnight.
  9. Before serving, stir in oils and soy sauce.
