Cauliflower With Chiles and Cheese
- 1 medium head cauliflower
- 1 tablespoon butter
- 1 (4 ounce) can green chilies, chopped & drained
- 12 cup minced scallion
- 1 12 cups grated cheddar cheese
- 1 cup sour cream
- 1 teaspoon salt
- 14 teaspoon black pepper
- 34 cup dry breadcrumbs
- Core cauliflower and break into small florets; steam 4 to 5 minutes until just crisp-tender.
- Drain and combine with 2 tablespoons butter.
- Stir in remaining ingredients except breadcrumbs.
- Sprinkle with breadcrumbs and remaining butter after putting in shallow 2-quart dish.
- Bake at 350*F for about 30 minutes or until top is lightly browned.
