Lemon Butter Potatoes
- 3 potatoes, peeled, cut in half, sliced
- 1 tablespoon extra light olive oil
- 3 tablespoons butter
- 2 teaspoons dried chives
- 12 teaspoon salt
- 2 tablespoons lemon juice
- 12 teaspoon ground black pepper
- Heat oil in large frying pan.
- Add potatoes when oil is hot.
- Cover and cook 8-9 minutes, stirring 1-2 times.
- While potatoes cook, mix other ingredients in small saucepan and heat.
- Add butter sauce.
- Cook uncovered on med for 4-5 minutes.
- Serve warm.
