Pannetone French Toast With Coconut Milk
- 12 vanilla bean, scraped
- 23 cup coconut milk
- 2 eggs, lightly beaten
- 2 tablespoons sugar
- 14 teaspoon ground cardamom (optional)
- 4 tablespoons butter
- 8 slices panettone or 8 slices other sweet bread
- confectioners' sugar, for dusting
- blueberries
- whipped cream
- Put the coconut milk, eggs, sugar, vanilla seeds, and cardamom in a bowl and beat well.
- Pour into a shallow dish.
- Over medium heat, heat half the butter into a large skillet.
- Dip each slice of bread into the egg mixture and cook until golden brown on both sides.
- Serve dusted with confectioner's sugar and topped with blueberries and cream.
