Dijon Maple Chicken Sliders

  1. Preheat oven to 350 F.
  2. Slice your polenta + mozzarella into thin rounds.
  3. Set aside.
  4. Halve chicken breasts.
  5. Spray pan with coconut oil.
  6. Saute chicken on medium high heat.
  7. Once tender, add mustard + maple syrup.
  8. Bring down the heat as the sauce bubbles.
  9. Spray a cookie sheet with coconut oil.
  10. Layer sliders from bottom to top with polenta, mozzarella, spinach, chicken.
  11. Bake in the oven for 15 minutes.
