Dijon Maple Chicken Sliders
- 4 chicken breasts, halved
- 1 (4 ounce) package polenta
- 10 slices fresh mozzarella cheese
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 1 (12 ounce) bag spinach
- Preheat oven to 350 F.
- Slice your polenta + mozzarella into thin rounds.
- Set aside.
- Halve chicken breasts.
- Spray pan with coconut oil.
- Saute chicken on medium high heat.
- Once tender, add mustard + maple syrup.
- Bring down the heat as the sauce bubbles.
- Spray a cookie sheet with coconut oil.
- Layer sliders from bottom to top with polenta, mozzarella, spinach, chicken.
- Bake in the oven for 15 minutes.
