Super Rice and Beans

  1. In deep nonstick 12-inch skillet, heat oil over medium heat until hot.
  2. Add celery and onion and cook, covered, 7 to 8 minutes or until tender and lightly browned, stirring occasionally.
  3. Add beans and rice mix, soup, 1 cup chopped tomatoes, and 2 cups water; heat to boiling over medium-high heat.
  4. Reduce heat to low; cover and simmer 20 to 25 minutes or until rice is tender.
  5. Stir in ham, cilantro, and lime juice.
  6. To serve, ladle into bowls and top with remaining chopped tomatoes; garnish with cilantro sprigs.
