Super Rice and Beans
- 1 tbsp. olive oil
- 4 celery stalks
- 1 medium onion
- 1 package seasoned black beans and rice mix
- 1 can 19 ounces
- 3 medium tomatoes
- 4 oz. deli ham in 1 piece
- 1/4 c. chopped fresh cilantro leaves
- 2 tbsp. fresh lime juice
- cilantro sprigs
- In deep nonstick 12-inch skillet, heat oil over medium heat until hot.
- Add celery and onion and cook, covered, 7 to 8 minutes or until tender and lightly browned, stirring occasionally.
- Add beans and rice mix, soup, 1 cup chopped tomatoes, and 2 cups water; heat to boiling over medium-high heat.
- Reduce heat to low; cover and simmer 20 to 25 minutes or until rice is tender.
- Stir in ham, cilantro, and lime juice.
- To serve, ladle into bowls and top with remaining chopped tomatoes; garnish with cilantro sprigs.
