Beef Tips with Onion & Mushroom Gravy

  1. Coat pan with cooking spray or extra-virgin olive oil.
  2. Add steak; saute 5 minutes, browning on all sides.
  3. Remove from pan; cover.
  4. Melt butter in pan over medium-high heat.
  5. Add shallots and mushrooms; saute 4 minutes.
  6. Add garlic; saute 30 seconds.
  7. Stir in soy sauce.
  8. Sprinkle flour over mushroom mixture; cook 1 minute, stirring constantly.
  9. Gradually add broth, stirring constantly.
  10. Add pepper, kosher salt, Worcestershire and thyme sprigs.
  11. Bring to a boil; cook 2 minutes or until thickened (optional- add low-sodium cream of mushroom).
  12. Return beef to pan; cook 1 minute or until thoroughly heated.
  13. Discard thyme sprigs.
  14. Garnish with chives.
