Kick 'Em, Jenny Salsa
- 8 roma tomatoes, chopped
- 5 spring onions, sliced
- 4 clove fresh garlic, minced
- 2 fresh jalapenos, chopped (no seeds or membranes)
- 1 small red/Spanish onion, chopped
- 1/2 bunch fresh cilantro, loosely chopped
- 1/2 tbsp extra virgin olive, grapeseed, or avocado oil
- 1/2 tsp lemon juice
- 1/2 tsp ground cumin
- 1 dash liquid smoke
- 1 dash salt to taste
- 1 dash Tapatio or similar Hot Sauce, to taste
- Place all ingredients into a bowl and mix well.
- I like mine partially blended and use an immersion blender.
- For best results, cover and refrigerate for a day before serving.
