Rum Dum Balls Recipe
- 1 stick butter
- 2 c. packed brown sugar
- 2/3 c. evaporated lowfat milk
- 1/2 c. peanut butter
- 1 c. toasted coconut
- Vanilla ice cream scooped into balls
- Heat butter over low heat.
- Stir in brown sugar and evaporated lowfat milk.
- Add in peanut butter and cook, stirring constantly till well blended.
- Roll ice cream balls in toasted coconut and top with sauce.
- (Coconut can be toasted by putting it in a shallow pan in 300 degree oven and stirring frequently till browned.)
