Cheddar Broccoli Chowder
- 2 tablespoons butter
- 1 onion, finely chopped
- 14 cup flour
- 3 cups chicken stock
- 2 cups potatoes, peeled and cubed
- 1 bay leaf
- 3 cups broccoli, finely chopped
- 1 12 cups milk
- 1 12 cups cheddar cheese, grated
- hot sauce (optional)
- Melt butter in large saucepan.
- Cook onion until softened.
- Blend in flour.
- Stir in stock.
- Bring to a boil, stirring until thickened.
- Add potatoes and bay leaf.
- Reduce heat.
- Cover and simmer, stirring occasionally for 10 minutes.
- Add broccoli and simmer, stirring occasionally for 10 minutes.
- Stir in milk and cheese.
- Heat until cheese melts.
- Remove bay leaf.
- Do not let soup boil.
- Season to taste.
