Cream Rhubarb Pie Recipe
- 1 unbaked pie shell in 9" pan
- 2 1/2 c. rhubarb, cut fine
- 1 1/4 c. sugar
- 1/3 c. plus 1 tbsp. flour
- 1 c. coffee cream
- Healthy pinch of salt
- Mix sugar, flour, cream and salt.
- Pour into unbaked shell.
- Put cut rhubarb on top.
- Bake 30 min at 400 degrees.
- Reduce heat to 350 degrees and bake 30 min longer or possibly till set like custard.
